Spirit driven whisky

Schofield Distillery uses Tasmanian Barley and Tasmanian Rain Water to create a spirit driven whisky in very limited supply to the highest standard.

All of our whiskies are mashed, fermented, distilled and bottled at the distillery.

Schofield Distillery is working on Gins, Vodkas and liquors however whisky is our number 1 focus.

Matured in Ex-bourbon casks

Schofield Distillery has made the decision to mature predominantly in American oak ex-bourbon casks.

This decision was made for a number of reasons, primarily, the ex-bourbon gives an excellent opportunity to impart vanilla and caramel flavours and characteristics in to the whisky without impacted too much tannins and cask influence. 

Second fill cask will be the main aim as others become ready.
